For the new dishes, Manuel has selected a combination of the finest seasonal ingredients with traditional Italian products. Guests can expect vibrant flavor highlights: red prawns with ricotta and lemon curd, mezzi paccheri with seafood, sole alla mugnaia, and yellowfin tuna ceviche with zucchini alla scapece. For lovers of rich flavors, the ravioli with beef cheeks and ricotta, served with aromatic butter, sage, and black truffle, or the risotto with tomatoes and calabrian nduja — where the spice of Italy’s legendary salami from Calabria is perfectly balanced with the freshness of tomatoes — are must-tries. Another favorite to warm up on cool days is the creamy soup with a delicate combination of eggplant, cherry tomatoes, and stracciatella.
