Italian haute cuisine restaurant IL Ristorante is situated on the hotel’s ground floor, featuring a convenient entrance directly from Bolshaya Nikitskaya Street. Executive Chef Manuel Pisu is dedicated to using high-quality seasonal ingredients, reimagining traditional Italian dishes in gourmet format. Among the menu’s highlights are the traditional Sardinian fregola sarda pasta, Catalan crab, Chianti cheeks presented in an elegant contemporary manner, and the emblematic dish of Piedmontese cuisine, vitello tonnato – tender veal in a sauce made with bluefin tuna, capers, and anchovies.
Manuel Pisu was born in Sardinia. He began his gastronomic journey as a child, working part-time in the family bakery. After completing his education in Cagliari, he gained his initial experience in luxury Porto Cervo hotels. Later, he graduated from École Ritz Escoffier, the legendary culinary and pastry arts school in Paris. Manuel then moved to Monte Carlo, where he worked alongside the renowned three-star Michelin Chef Mauro Colagreco. Today the Executive Chef of Stella di Mosca Hotel sees his future in Russia.
Manuel Pisu’s work pays tribute to Italian gastronomic traditions and the cuisine of his native Sardinia, but reassembles the traditional ingredients and flavors of his childhood to create bold, innovative dishes for IL Ristorante’s menu.
